Preheat the STOK Grill Grate to medium-high. Gather and prep ingredients.
Combine the jalapenos, sliced monterey jack and cream cheese in a mixing bowl.
Stir until a consistent mixture is formed.
Carefully slice the breast in half widthwise almost to the other edge. Open and press the breast flat.
Season the outside with salt and pepper, to taste.
Spread the mixture of jalapenos and the cheeses on each of the chicken breasts. Fold shut.
Wrap the folded and stuffed chicken breast with the bacon strips. (2 slices per breast)
Using tongs, place chicken directly onto STOK grill grate. Let chicken cook on low to medium heat, with the lid down for 20-30 minutes.
Flip the chicken breast so the bacon is crispy on both sides. The chicken is ready to be served when it has reached an internal temperature of 165º.
