Slice your watermelon into wedges, about 1 1/2 inches thick.
Spinkle sea salt on both sides of the watermelon wedges, and set aside to drain for about a half hour.
Once the watermelon has sat and drained, run the wedges under cold water.
Pat the watermelon dry with a paper towel.
Lightly brush olive oil onto both sides of the watermelon wedges.
Place the watermelon directly onto high heat. Grill for about 3-4 minutes.
After 3-4 minutes flip the watermelon over and grill for another 3-4 minutes. Remove from heat and enjoy!
