Gather all of your ingredients, and preheat your grill to medium high.
Grill bacon on the griddle insert to your personal preference.
Using the bacon grease left over on the griddle insert, place your plantains in the grease and cook until tender and they will turn a deep yellow.
Place your bacon and your plantains to the side.
Take our your griddle insert, and place the grill grate insert in your grill. Season your chicken with poultry seasoning and place your chicken onto the grill grate.
After a couple of minutes flip the chicken over.
Once chicken is almost finished grilling, place your cooked bacon directly on top of the chicken.
Place your buns on an open part of the grill to toast them.
Place grilled plantains on top of the bacon.
Place pepper jack cheese on top of the plantains. Take buns off of the grill and close the lid to allow cheese to melt.
Spread the bbq sauce onto both sides of your bun.
Check your chicken to see if the cheese has melted.
Place fresh jalapeno slices on top of the melted cheese.
Take you chicken and place it directly on the bun. Close sandwich and enjoy!
