Gather ingredients and preheat Gridiron to medium-high heat
Add butter and olive oil
Add chicken to Wok insert
Sear 5-10 min browning on both sides
Reduce to medium-low and add the red peppers
Add garlic
Add chicken stock
Add soy sauce
Add peanut butter
Bring to a boil over medium-high heat, then reduce to low and let simmer- stir frequently for 5 min
Garnish with green onions
