Spinach Salad with Grilled Shrimp

  • 2 Tablespoons rice vinegar
  • 2 Tablespoons orange juice
  • 1 1/2 Tablespoons extra virgin olive oil
  • 1 Tablespoon honey
  • 1 Tablespoon low sodium soy sauce
  • 1/2 teaspoon grated and peeled fresh ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon crushed red pepper
  • Shrimp
  • 2 teaspoons of extra virgin olive oil
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon cumin
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 2 garlic cloves, minced
  • 2 pounds of large shrimp, peeled and deveined
  • 8 cups baby spinach
  • 2 cups shitake mushrooms caps
  • 3/4 cup thinly sliced red onion

Preparation

Step 1

Get all the ingredients together you will be making dressing, shrimp and salad.

Mix the first 8 ingredients in a large bowl, whisk the mixture and set aside until finished.

Prepare grill and add 2 teaspoons of olive oil with the next 6 ingredients including shrimp. Mix together.

Place shrimp in the Wok insert and stir fry for 3 minutes until shrimp is pink and done.

Mix together the spinach, mushrooms and onion to dressing. toss gently to coat and serve with shrimp.
